Ingredients

  1. For the Pav Bhaji Filling:
    1. 2 cups boiled mixed vegetables (potato, cauliflower, peas, carrots)
    2. 1 onion, finely chopped
    3. 1 tomato, chopped
    4. 2 tablespoons pav bhaji masala
    5. 1 teaspoon ginger-garlic paste
    6. 1/2 teaspoon turmeric powder
    7. 1/2 teaspoon red chili powder
    8. Salt to taste
    9. 2 tablespoons butter
    10. 2 tablespoons chopped coriander
  2. For the Dough:
    1. 2 cups whole wheat flour
    2. 1/2 teaspoon salt
    3. 1 tablespoon oil
    4. Water as needed

Method / Preparation

Follow step-by-step instructions
  1. For the filling, heat butter in a pan, sauté chopped onions until translucent, then add ginger-garlic paste, tomatoes, and boiled vegetables.
  2. Mix in pav bhaji masala, turmeric, red chili powder, and salt; cook until the filling thickens and mash coarsely. Stir in chopped coriander.
  3. Combine the dough ingredients; knead into a smooth dough and let it rest for 20 minutes.
  4. Divide the dough into small balls, roll each into a small circle, place a generous amount of the filling in the center, and fold to seal.
  5. Gently roll out the stuffed dough into a paratha, then cook on a hot griddle with a little oil until both sides are golden brown.
  6. Serve hot with butter and extra pav bhaji on the side.
