  2. 1/4 teaspoon rock salt
  3. Optional: 1/2 teaspoon roasted cumin powder
  4. 1 tablespoon oil or ghee
  5. Water (as needed to form a soft dough)

Method / Preparation

Follow step-by-step instructions
  1. In a bowl, combine the rajgira flour with rock salt and, if using, roasted cumin powder.
  2. Gradually add water while mixing until a smooth, pliable dough forms.
  3. Drizzle in the oil (or ghee) and knead until the dough is soft; cover and rest for 15 minutes.
  4. Divide the dough into equal balls and roll each ball into a thin, round paratha using a lightly dusted rolling surface.
  5. Cook on a hot non-stick pan with a little oil until both sides are lightly browned and the paratha is cooked through.
  6. Serve warm with a fasting-appropriate yogurt or chutney.
