Ingredients

  1. 1 cup singhara (water chestnut) flour
  2. 1/4 cup rice flour
  3. 1/2 teaspoon rock salt
  4. 1/2 teaspoon roasted cumin powder
  5. 1 tablespoon oil
  6. Optional: 1 teaspoon finely chopped fresh mint
  7. Warm water as needed

Method / Preparation

Follow step-by-step instructions
  1. In a large bowl, sift together the singhara flour and rice flour along with rock salt and roasted cumin powder. Stir in the chopped mint if using.
  2. Add oil and gradually mix in warm water to form a smooth, soft dough. Knead the dough for about 5 minutes.
  3. Divide the dough into small equal portions and roll each into very thin discs on a lightly floured surface.
  4. Arrange the rolled-out discs in a steamer basket. Steam over boiling water for 10–12 minutes until they are cooked through and soft.
  5. Remove and let them cool slightly. Serve as a savory fasting snack with a side of mint chutney.
